So this weekend I needed to use up the rest of my fresh mushrooms and onions. I’ve been wanting to try making a pizza for a while but just haven’t yet. While I have seen recipes for various low carb crusts to make I just wanted to go with something quick. My friend, Lisa D. made a pizza using one of her low carb wraps two years ago and I still remember it! Ha. So I checked in with her on what she did and then took a look at what I had in my cabinets.

Ingredients:pizza

1 Tomato Basil Xtreme Wellness Wrap – 5 net carbs

1 tbsp of Simple Truth Tomato Paste – 1.5 net carbs

Garlic powder (to taste)

Shredded cheese (to taste) – I used mozzarella, sharp cheddar & parmesan

4 ozs mushrooms – 4 net carbs

1 oz onion – 1.4 net carbs

Total carbs = 11.9

 

Directions:

I preheated my oven to 350 degrees and placed the wrap on a round pizza sheet to crisp. My friend, Lisa, said this was key as the wrap would be mushy otherwise. I crisped it somewhere between 10-15mins. I haven’t quite mastered the timing on this but it was still good. While the wrap was crisping I sauteed my mushrooms and onions in Olive Oil. I just love my mushrooms and onions sauteed. It ministers to me. Haha! I also mixed up the garlic powder and tomato paste. Took the wrap out of the oven and started layering. I spread the garlic tomato paste all over then added my onions, mushrooms and cheese. I then placed it back in the oven until the cheese melted to bubbly perfection. And voila you have your own personal thin crust pizza!

Obviously, there are so many things you can add to this little pizza. I just went with what I had on hand. I’ll be adding pepperoni and peppers to my grocery list for this week. But as with all these recipes find what works best for you and is within the carb range that you want to use and enjoy!!
